Fill yer boots! Fish Pie with hidden vegetables

For any of you lucky enough to have a teenager in your life you'll appreciate my love of cheap, nutritious and most importantly, filling, meals. 

My teenager has evolved from a fussy snacker into a human dustbin. He bursts through the front door at the end of the school day & right on cue, asks "how long 'til dinner?". It's like he has a hunger that never goes.

One of my favourite teen filler uppers is fish pie. I make it the day before and yes economy fish to keep costs down, as a lot of the flavour is lost in the sauce & with the extra vegetables, I feel I can get get away with being thrifty. 

Ingredients
Maris Piper potatoes
2 Grated Carrots
2 Handfuls of Spinach
Handful of peas
Finely Chopped onion (stops tween picking them out)
2 hard boiled eggs
300ml Double cream
White fish
Smoked cod or haddock
Grated cheese
Lemon juice 
Fresh parsley
Teaspoon English mustard


Method;

  • Preheat oven to 180
  • Peel potatoes, cube and put in boiling water along with the eggs. 
  • In a large frying pan, fry up the onion & carrots until soft.

  • Turn heat off & add the cream
  • Add lemon juice, salt & pepper, grated cheese, spinach, chopped parsley. 
  • Put in  an oven proof dish add the fish, chopped boiled eggs, top with the mashed potatoes and top with cheese. 

  •  Bake in a pre heated oven on gas mark 180 for an 1/2 hour or longer if you've  made it the day before.  

          
If you look really closely you can see a map of Europe.



  • Serve up to your eagerly awaiting family 




              
Burnt, crispy bits optional!


And smile smugly to your self knowing you've got 3 of their 5 a day and a few portions of fish in with out them even realising. 


Ready to serve.
If you're really brave, or have children without a vegetable aversion, you can serve  extra portions. 


You can add salmon, prawns or just use a fish pie mix. 
Anything goes really!
